Featuring our most requested Mediterranean Frittata

There is a quiet kind of magic that happens in the early morning at Barren Breeze Bed & Breakfast. Before the sun stretches across the fields and before coffee cups begin their gentle clink against porcelain, the kitchen begins its gentle rhythm. Coffee blooms into the air. Herbs are gathered. The day begins, not with urgency, but with intention.

Breakfast is not simply a meal. It is how we get to know our guests. It is how we care for them. It is, in every sense, our love language.

One dish has become a guest favorite, requested time and time again. Our Mediterranean Frittata is light, fresh, and deeply satisfying, filled with vibrant vegetables, creamy cheeses, and fresh herbs. Naturally vegetarian and gluten-free, it offers nourishment without heaviness and comfort without compromise.

We often serve it alongside thyme roasted potatoes, crisp and golden, and Earl Grey poached pears, gently infused with delicate citrus and floral notes. Together, the plate feels both rustic and refined. A breakfast that grounds you while quietly elevating the morning.

Guests linger longer at the table when this dish is served. Conversations stretch. Coffee cups are refilled. The outside world can wait a little longer.

Barren Breeze Mediterranean Frittata Recipe

Gluten Free Frittata
Gluten Free Frittata

Serves: 8 Prep Time: 15 minutes Cook Time: 30-35 minutes

Ingredients

  • 6 large eggs

  • ½  cup heavy cream

  • ½  cup whole milk

  • 1 cup cherry tomatoes, halved

  • 1 cup fresh spinach, lightly chopped or torn

  • ½ cup roasted red peppers, sliced

  • ½ cup crumbled feta cheese

  • ½ cup shredded mozzarella cheese

  • ¼ cup red onion, finely diced

  • 2 cloves garlic, minced

  • 2 tablespoons fresh basil, chopped (or 1 tsp dried)

  • 2 tablespoons Herbs de Provence 

  • 1 teaspoon salt

  • ½ teaspoon black pepper


Instructions

  1. Preheat oven to 425°F.

  2. Dice the vegetables Fine dice the vegetables and garlic and set aside. 

  3. Prepare the egg mixture In a large bowl, whisk together eggs, milk & cream, salt, pepper, basil, and Herb de Provence until fully combined.

  4. Assemble the frittata Spread the spinach evenly in the bottom of pie dish or skillet. Add cherry tomatoes, onion, red peppers and feta.. Pour egg mixture over the top.  Sprinkle top with shredded mozzarella

  5. Bake Lower oven to 375°F. Put pie plate on cookie sheet in oven and bake for 30–35 minutes, until center is set and edges are lightly golden. (if it starts to darken, cover with aluminum foil)

  6. Rest and serve Allow to rest for 5–10 minutes before slicing. This helps the frittata set and makes serving easier.

Serve with thyme roasted potatoes and fresh fruit or poached pears. A hot cup of coffee or Earl Grey tea completes the experience.

This frittata reheats beautifully, making it perfect for slow mornings or sharing with family and friends.

Thyme Roasted Potatoes

Crisp edges, tender centers, and the comforting aroma of fresh herbs

Serves: 8 Prep Time: 10 minutes Cook Time: 35–40 minutes

Ingredients

  • 2 pounds Yukon Gold potatoes, cut into 1-inch cubes

  • 3 tablespoons avocado or  olive oil

  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

Instructions

  1. Preheat oven to 425°F.

  2. Season the potatoes In a large bowl, toss potatoes with olive oil, thyme, salt, pepper, and garlic powder until evenly coated.

  3. Roast Spread potatoes in a single layer on a baking sheet. Roast for 35–40 minutes, turning halfway through, until golden brown and crisp on the outside.

  4. Serve warm Finish with a light sprinkle of sea salt if desired.

Barren Breeze Tip: Yukon Gold potatoes create the perfect balance of creamy interior and crisp exterior.



Earl Grey Poached Pears

Soft, fragrant, and gently infused with citrus and tea

Serves: 8

Ingredients

  • 4 ripe but firm pears, peeled, halved, and cored (use spoon or melon baller)

  • 3 cups water

  • 3 Earl Grey tea bags

  • ½ cup sugar

  •  ½ teaspoon vanilla bean paste 

  • Optional: strip of lemon peel or small cinnamon stick

Instructions

  1. Create the poaching liquid In a saucepan, bring water to a gentle simmer. Add tea bags and steep for 5 minutes. Remove tea bags.

  2. Add flavor Stir in sugar, vanilla, and optional lemon peel or cinnamon stick.

  3. Poach the pears Add pears and simmer gently for 15–20 minutes, until tender but not falling apart.

  4. Cool in liquid Remove from heat and allow pears to cool in the poaching liquid. This deepens their flavor.

  5. Serve Serve warm or chilled.  Top with granola if desired.

Barren Breeze Tip: These can be made a day ahead and refrigerated. The flavor becomes even more lovely overnight.
